Eggs pancake for lunch




Trying to figure out how to make my lunch for tomorrow. After open my fridge and found out I only have 4 eggs and some veggies, sweet potatoes and lettuce.




I don’t like eggs to much I do like egg white but yolk I hate specially the smell. So every time I need eat the whole egg I need try create some good that takes a bit of the smell away.

I made a pancake with two whole eggs and I bit of water. And on the side I cooked the tomato with onions, leek, corn with salt, pepper and olive oil.





The pancake is ready. Well, some people may call it a omelette but I like call it pancake. I added some lettuce and half sweet potato.  I didn’t taste the yolk to much so it was a success lunch.



Abri a geladeira pra ver o que ia fazer para meu almoco de amanha. E so achei 4 ovos, alguns legumes, salada e batata doce. Nao gosto da gema do ovo so gosto de comer a clara mas minha nutricionista quer que eu coma a gema tambem. Entao sempre tento fazer algo que seja bem saboroso com ovos porque dai nao sinto o gosto ou cheiro da gema.

Fiz uma panqueca ou omelete com dois ovos e um pouco de agua. E separadamente cozinhei cebola, alho poro, um tomate, milho, sal e pimenta. Fiz uma panqueca com os legumes no meio. Esse foi meu almoco com meia batata doce e uma salada. Nem senti o gosto da gema do ovo. 🙂





Spaghetti Squash



I am very excited to tell you that I tried spaghetti squash for the first time ever. I feel stupid saying it but I will say…I have a lot of fun making it. I yelled at my husband to run to the kitchen and see how magic it was. He did’nt seem impressed but I was. I made him touch it and tried make it himself for a bit to see how cool it was.

I just cut it in half and boiled for 20 minutes. Scooped out the seeds with a spoon and started using the fork pulling out the spaghetti. DSC_0308


The whole squash yielded enough for 4 of my meals and other half I gave for my husband’s lunch tomorrow.


I added some of my homemade tomato sauce on top of it. All what I can say is my belly and my face are both very happy.


Veggies noodles




My friend told me about this little tool he got at Bartells for 14,99 that makes veggies noodles. I got very excited about and ran to the store to buy one for myself. It is very easy to use i just put zucchini and yellow squash inside twist around and voila it makes delicious noodles.


I tried with carrots also and worked great. I made the veggies noodles and some homemade tomato sauce with some grilled chicken and lunch was ready.

Amazing thing about it is that taste almost like noodles but it isn’t and also is very healthy. If you don’t have it and still wants to have veggies noodle you can use a potato peel thing. I used before. Or cut into little pieces.





You can also use it on cucumber to make salads. Yummy and healthy. Eat pasta without feeling guilty.

Cauliflower rice

Cauliflower has some much to offer for your health. It does helps fight cancer, boost you brain and heart health, detoxification support, antioxidant and anti-inflammatory. Provides you lots of vitamin C that helps keep you healthier.

Some people don’t eat cauliflower because they don’t know what to make with it. Or because they tried a boring recipe before and they think it taste always bad but it doesn’t. Cauliflower can be use as an appetizing with hummus or other dip. It also can be baked with some cumin and will taste amazing or mashed instead of potatoes for a mashed cauliflower recipe. I make pizza, tortilla, “potato” salad and now rice with cauliflower. YES, rice.

Last night I was feeling like having some rice so here is my recipe for it:

First, I chopped the whole cauliflower head into pieces and added in the food processor. Just pulsed a bit till it looks like a rice shape.




After that, set aside the cauliflower and start to prepare the veggies. Add some olive oil to a pan and some leek, onion and garlic. Cook for a little bit.



Add also all the veggies you want to your rice can be anything. Corn, peas, carrots, zucchini, peppers etc. You can add ground meat as well I made with ground turkey/chicken before.

This one I use peas, corn, purple carrots and frozen green beans.




Cook till veggies are soft. Then add salt, pepper, sesame seeds and if you like soy sauce. I put gluten free tamari instead because I can’t have gluten.



Last thing you need to do is add all the cauliflower “rice” to it. Just cook for a little bit. And its all done.



Serve with some kind of protein and you have a perfect healthy meal. Enjoy your rice.


Healthy baked eggplant



Hello there,

Today the recipe is super simple. I sliced a eggplant and dip in egg white and quinoa flakes. I baked it around 20 minutes or so on 400F.

You can also add pink salt and pepper but I forgot add on mine. If you want it crunch just bake longer. It is a very light healthy side dish for dinner or you can eat with hummus or some other dip. I just ate itself because I try keep my meals very simple.

Helping my best friend plus healthy arugula salad



This week I am dedicating my post to my best friend ever Leila. She is being my best friend for so long that I feel like she knows me better than I do. We haven’t seen each other since 2008 but our friendship continues the same.

This is my best friend, me and our friend. This picture is from 2007 I believe.


This Sunday she told me, that she is having some troubles losing weight. She got some extra pounds over those 5 years and is having a really hard time to get back in shape.

This week she went to a nutritionist and  decided to do everything right with  healthy foods and exercises. I am very proud of her and for that reasons I have decided to give her all the support I can.

I started to eat really healthy on Monday same days as she did. For now on we are supporting each other on that not only for weight lost but mainly for our health and well being. Every time I feel like eating something bad I will think about her and I will not do it.

Anyway, this is one of my salads for this week. Amazing and  delicious with all the vitamins you need. I made just for myself so if you sharing with someone just add extra amounts.

Ingredients for the salad:

– Arugula

– Fresh boiled beets

– One strawberry

– 7 raw almonds

– 1/2 avocado

–  one tablespoon of goat cheese

– some slices of cucumber


A mix of a little bit of lemon juice, olive oil, balsamic vinegar, honey, mustard, and red wine vinegar (optional).

The salad with dressing is yummylicious.


Don’t ever think you are alone. There are always people that would love to help you to get healthier and better about yourself. Enjoy the salad.

Arugula salad with homemade yogurt dressing

Please, don’t buy any salad dressing, like I said before, they are full of bad ingredients like refining Oils, sugar and fat. Even the fat free versions are bad for you. Instead make your own dressing with ingredients you have in your kitchen its easy and fun.

I made yogurt dressing today. It’s my favorite.



– 1 1/2 cup of arugula or any other lettuce.

– 7 roast almonds unsalted

– some raisins

– 2 hard boiled eggs

– 1/2 cup  shopped apple

Yogurt dressing:

– 1 tablespoon of plain greek yogurt

– 1/4 teaspoon of dijon mustard

– 1/4 teaspoon of olive oil

– 1/4 teaspoon of lemon juice

– 1/4 teaspoon of honey

– 1/2 teaspoon of apple cider vinegar

– A pinch of salt/pepper

Mix all the dressing ingredients and add it to the salad. Mix well and serve.

It’s been a long time since I  blogged. My life is being a little crazy right now, I have a new job.  I am Personal Trainer at a local gym and I am loving it so much. Soon I will try post some exercises  and stretch ideas.

I am playing in the kitchen lately and I created  about 4 more  pancakes recipes. All of them healthier than normal pancakes. I will try post them all when I have a chance. I am crazy about PANCAKES.

Here is a super fast and simple recipe for breakfast: This recipe makes just 2 pancakes for my belly.


– 1/2 cup of oats

– 1 egg

– 2 tablespoons of blanched almond flour

– 1/4 teaspoon of baking soda

– 1 teaspoon of chia seeds

– 3 tablespoons of milk ( if is to thick you can add more milk)

– 1 teaspoon of honey

Add all the ingredients in a container and mix with a hand mixer. Mix until smooth. Heat a lightly oiled frying pan over medium low heat. Pour or scoop the batter onto the pan, using approximately 1/2 of the batter. Brown on both sides and serve hot.

Update from ” Growing your own veggies in apartment”


I have been so busy with my puppy lately so I could not blog to much. I am spending most of my time training him but he is still a crazy puppy. About 2 months ago I decided to grow my own veggies on my balcony here is the link. So today I am just giving you a short update about it.

So Here is my jalapeño. It has a little jalapeño that is growing fast.

My lavender is doing okay too.

The rosemary I already used it to cook 4 times. I made some rosemary crackers and some white beans and rosemary warm dip. 🙂



And my parsley I also used in my recipes some times.


Unfortunately my spinach and basil didn’t survive to tell their  story. 😦

I am not taking care of them really well and my puppy likes to bite them sometimes so I need keeps my eyes in all of them all the time. But I am still glad I did it because every time I need some fresh rosemary or parsley for my food they are right there I don’t need go to store and get them.

I will try grow other vegetables again and be more careful this time. Well, I have to go someone is waiting for me….

Excellent low carbs recipe : Egg white muffin


Super yummy low carb recipe. I sprayed with cooking spray these foil muffin pans because I don’t have normal muffins pans ( I am poor 😦 ) .So I added some frozen broccoli, some green onions and cilantro.

After that, I poured in egg white.

A pinch of salt/ pepper/ oregano. Plus some mozzarella cheese and is ready for bake.

I baked it in 350 F for about 15 minutes.

There are many variations for this recipe. You can add more veggies or use different ones. You can add milk or other herbs. Mushrooms and spinach are great in it too. Enjoy.
