Eggs pancake for lunch

Hello,


Trying to figure out how to make my lunch for tomorrow. After open my fridge and found out I only have 4 eggs and some veggies, sweet potatoes and lettuce.

I don’t like eggs to much I do like egg white but yolk I hate specially the smell. So every time I need eat the whole egg I need try create some good that takes a bit of the smell away.

I made a pancake with two whole eggs and I bit of water. And on the side I cooked the tomato with onions, leek, corn with salt, pepper and olive oil.

The pancake is ready. Well, some people may call it a omelette but I like call it pancake. I added some lettuce and half sweet potato. ¬†I didn’t taste the yolk to much so it was a success lunch.

Abri a geladeira pra ver o que ia fazer para meu almoco de amanha. E so achei 4 ovos, alguns legumes, salada e batata doce. Nao gosto da gema do ovo so gosto de comer a clara mas minha nutricionista quer que eu coma a gema tambem. Entao sempre tento fazer algo que seja bem saboroso com ovos porque dai nao sinto o gosto ou cheiro da gema.

Fiz uma panqueca ou omelete com dois ovos e um pouco de agua. E separadamente cozinhei cebola, alho poro, um tomate, milho, sal e pimenta. Fiz uma panqueca com os legumes no meio. Esse foi meu almoco com meia batata doce e uma salada. Nem senti o gosto da gema do ovo. ūüôā

Spaghetti de abobora

Oi,

Hoje resolvi provar o spaghetti de abobora. Por um bom tempo queria fazer mas sempre esquecia de comprar. Tudo que posso dizer e que me diverti muito fazendo isso. Ate chamei meu marido e fiz ele fazer tambem porque e bem bacana eu parecia uma crianca fazendo magica de feliz.

Voltando pra receita. Cortei a abobora no meio e fervi por 20 minutos. Tirei as sementes com uma colher e ai e so desfiar o spaghetti com o garfo uma delicia.

Metade da abobora rendeu 4 refeicoes pra mim e a outra metade salvei pro meu marido comer no almoco de amanha.

Coloquei um pouco da pasta de tomate que eu fiz essa semana e pronto. Minha barriga esta feliz.

Spaghetti Squash

I am very excited to tell you that I tried spaghetti squash for the first time ever. I feel stupid saying it but I will say…I have a lot of fun making it. I yelled at my husband to run to the kitchen and see how magic it was. He did’nt seem impressed but I was. I made him touch it and tried make it himself for a bit to see how cool it was.

I just cut it in half and boiled for 20 minutes. Scooped out the seeds with a spoon and started using the fork pulling out the spaghetti. DSC_0308

 

The whole squash yielded enough for 4 of my meals and other half I gave for my husband’s lunch tomorrow.

I added some of my homemade tomato sauce on top of it. All what I can say is my belly and my face are both very happy.

Veggies noodles

Hello,
My friend told me about this little tool he got at Bartells for 14,99 that makes veggies noodles. I got very excited about and ran to the store to buy one for myself. It is very easy to use i just put zucchini and yellow squash inside twist around and voila it makes delicious noodles.

I tried with carrots also and worked great. I made the veggies noodles and some homemade tomato sauce with some grilled chicken and lunch was ready.

Amazing thing about it is that taste almost like noodles but it isn’t and also is very healthy. If you don’t have it and still wants to have veggies noodle you can use a potato peel thing. I used before. Or cut into little pieces.

You can also use it on cucumber to make salads. Yummy and healthy. Eat pasta without feeling guilty.

Arroz de couve-flor


Couve-flor tem tanto a oferecer para sua sa√ļde. ¬†Ele ajuda a preventer cancer, melhora o funcionamento do c√©rebro e coracao, ajuda na detoxificacao. ¬†E um antioxidante e anti inflamatorio. Tambem contem bastante vitamina C que te ajuda a se manter saudavel.

Algumas pessoas n√£o gostam de comer couve-flor porque eles n√£o sabem como preparar isso or porque comeram antes em uma receita mal feita. Couve-flor pode ser usado com pasta de gr√£o de bico como um aperitivo em festa, ou pode ser asado com cominho ou ainda feito um pure pra acompanhar carne no lugar da batata.

Eu uso couve-flor pra fazer pizza, tortilhas, maionese e arroz. SIM, arroz.

Essa e a receita que fiz ontem a noite. Primeiro coloquei um cabeça de couve-flor cortada em pedaços menores dentro do processador.

Pulse um pouco ate que o couve fique no formato de arroz.

Deixe de lado. Agora e hora de preparar os vegetais, legumes e/ou carne que voce queira adicionar a receita. Um pouquinho de azeite de oliva, alho, cebola e alho poro. Refoge um pouco.

Depois disso adicione seus vegetais e legumes ou carne. Pode usar qualquer um. Tomate, piment√£o, nabo, abobrinha, etc…Eu usei cenoura roxa, milho, vagem e ervilhas.

Refoge mais ate que eles estejam macios. Coloque sal e pimenta eu também coloquei gergelim e um pouco de molho de soja gluten free.

Por ultimo, adicione o couve-flor e cozinhe so um pouquinho o ideal e so refogar um minuto porque ai fica na textura de arroz.

Prontinho seu arroz. Agora e so preparar a carne ou outra proteína e sua refeição saudável esta prontinha. Pode se servir mais de uma vez porque esse e melhor que arroz e bem mais light.

Healthy baked eggplant

Hello there,

Today the recipe is super simple. I sliced a eggplant and dip in egg white and quinoa flakes. I baked it around 20 minutes or so on 400F.

You can also add pink salt and pepper but I forgot add on mine. If you want it crunch just bake longer. It is a very light healthy side dish for dinner or you can eat with hummus or some other dip. I just ate itself because I try keep my meals very simple.

Summer salad recipe

Hello, it’s been a long time since I last blogged. Life is been really great and I am finally feeling better from all my digestion, allergies problems.

I want to get back into writing my blog because its fun and I miss it a lot.

Today I have a fast delicious recipe for a summer dinner. All what you need is to chop some tomatoes, greens onions and corn. Add some pepper, olive oil and pink salt to it, and you have a very delicious side dish.

For tomorrow I have rutabaga recipe. I ate rutabaga today for the first time and I really like it.

Gluten free Irish soda bread


Irish soda bread

This is an amazing recipe I found on Elana’s Pantry blog¬†. I used honey instead agave nectar.

Here is the ingredients:

Ingredients

2 ¬ĺ cups blanched almond flour
¬ľ teaspoon¬†salt
1 ¬Ĺ teaspoons baking soda
¬Ĺ cup raisins
2 eggs
2 tablespoons honey
2 tablespoons apple cider vinegar
pinch of caraway seeds

In a large bowl combine almond flour, salt, baking soda and raisins

In a smaller bowl combine eggs, honey and apple cider vinegar

Mix wet ingredients into dry. ¬†Place dough on a baking tray and¬†form dough into a large, flat circle that is 8 inches across and 1 ¬Ĺ inches tall.¬†Using a serrated knife, score top of dough¬†¬†a half an inch deep in shape of a cross.¬†Sprinkle top of bread with caraway seeds.

Bake at 350¬į for 20 minutes, then turn off oven and leave bread in for 10 more minutes.

This bread is delicious I can’t stop eat it.

My husband and I love this bread. Especially now that we also know how to make Irish coffee. ūüėČ

Gluten free pancakes


Today I woke up craving pancakes. I am trying to keep away from wheat especially whole wheat flour because my belly never feels good after eating it. I am not sure if I am wheat intolerant or not, that’s why I am avoiding it.

So today, as I was saying I had this craving for pancakes and I started to play around with some stuff I had in the fridge. The results were delicious gluten free pancakes.

Here what I used:

*Makes 2 pancakes

– 2 tablespoons of trade joe’s almond meal

Р1 tablespoon of Blanched almonds flour ( got in the bulk set ion at whole food market)

– 1 whole egg

– 1 teaspoon of honey

– 2 tablespoons of flaxseed meal

– a pinch of baking soda

Рapproximately 1/4 cup of  milk

Mix all the ingredients in a bowl. Except the milk. Add the milk gradually if is to dry you can always  add a little extra.

After that, heat a frying pan over medium heat and pour the batter onto the griddle,  approximately 1/2 of it .

Brown on both sides and serve hot. I like eat my pancakes with honey on or peanut butter. Yummylicious.

Almond flour pita bread


I am totally in love with almond flour. Buttery flavor packed with protein and healthy fat…yummy. Researching for a low carb pita bread option. I found this gluten free almond flour pita bread recipe. Here is ¬†Michelle’s blog¬†where I found the recipe of this amazing pita.

Ingredients:

  • 1 egg
  • 1/4 cup of water
  • 1 tablespoon oil or melted butter ( I used olive oil)
  • 1 tablespoon coconut flour, firmly packed ( I¬†didn’t have any so I didn’t use it)
  • 1/4 cup almond flour, firmly packed ( I used 1 1/4 instead no sure if I did it right)
  • 1/8 teaspoon baking soda
  • 1/8 teaspoon salt.

Preheat oven to 350.Whisk together egg, water and oil. Add dry ingredients, whisk well to combine.Pour into 2 equal portions onto a well greased sheet tray.

Spread each portion to a 5-6 inch round.Bake for 18-20 minutes, it will be darker in color, and slightly crisp around the edges.

Make 2 pita breads.

As you noticed mine does not look as nice Michelle’s. I will make it again and post updates in case I can make it better looking pitas. ūüôā
