Spaghetti Squash



I am very excited to tell you that I tried spaghetti squash for the first time ever. I feel stupid saying it but I will say…I have a lot of fun making it. I yelled at my husband to run to the kitchen and see how magic it was. He did’nt seem impressed but I was. I made him touch it and tried make it himself for a bit to see how cool it was.

I just cut it in half and boiled for 20 minutes. Scooped out the seeds with a spoon and started using the fork pulling out the spaghetti. DSC_0308


The whole squash yielded enough for 4 of my meals and other half I gave for my husband’s lunch tomorrow.


I added some of my homemade tomato sauce on top of it. All what I can say is my belly and my face are both very happy.



Veggies noodles




My friend told me about this little tool he got at Bartells for 14,99 that makes veggies noodles. I got very excited about and ran to the store to buy one for myself. It is very easy to use i just put zucchini and yellow squash inside twist around and voila it makes delicious noodles.


I tried with carrots also and worked great. I made the veggies noodles and some homemade tomato sauce with some grilled chicken and lunch was ready.

Amazing thing about it is that taste almost like noodles but it isn’t and also is very healthy. If you don’t have it and still wants to have veggies noodle you can use a potato peel thing. I used before. Or cut into little pieces.





You can also use it on cucumber to make salads. Yummy and healthy. Eat pasta without feeling guilty.

Healthy baked eggplant



Hello there,

Today the recipe is super simple. I sliced a eggplant and dip in egg white and quinoa flakes. I baked it around 20 minutes or so on 400F.

You can also add pink salt and pepper but I forgot add on mine. If you want it crunch just bake longer. It is a very light healthy side dish for dinner or you can eat with hummus or some other dip. I just ate itself because I try keep my meals very simple.

Helping my best friend plus healthy arugula salad



This week I am dedicating my post to my best friend ever Leila. She is being my best friend for so long that I feel like she knows me better than I do. We haven’t seen each other since 2008 but our friendship continues the same.

This is my best friend, me and our friend. This picture is from 2007 I believe.


This Sunday she told me, that she is having some troubles losing weight. She got some extra pounds over those 5 years and is having a really hard time to get back in shape.

This week she went to a nutritionist and  decided to do everything right with  healthy foods and exercises. I am very proud of her and for that reasons I have decided to give her all the support I can.

I started to eat really healthy on Monday same days as she did. For now on we are supporting each other on that not only for weight lost but mainly for our health and well being. Every time I feel like eating something bad I will think about her and I will not do it.

Anyway, this is one of my salads for this week. Amazing and  delicious with all the vitamins you need. I made just for myself so if you sharing with someone just add extra amounts.

Ingredients for the salad:

– Arugula

– Fresh boiled beets

– One strawberry

– 7 raw almonds

– 1/2 avocado

–  one tablespoon of goat cheese

– some slices of cucumber


A mix of a little bit of lemon juice, olive oil, balsamic vinegar, honey, mustard, and red wine vinegar (optional).

The salad with dressing is yummylicious.

Corn and pepper salad

This is a simple and easy salad with a amazing flavor. Is a great side dish for grilled chicken or steak. Or even as a wrap with a whole wheat tortilla.

You will need:

– Half red pepper plus half yellow pepper both shopped into small pieces

– 4 tablespoons of onion shopped

– 1 tomato shopped

– 1 teaspoon of dry parsley

– 2 teaspoons of fresh basil shopped

– 1 can of sweet corn drained

– a dash of salt/pepper/lemon/olive oil

Add it all in a bowl and add the seasons on and is ready to eat.

Gluten free Irish soda bread

Irish soda bread

This is an amazing recipe I found on Elana’s Pantry blog . I used honey instead agave nectar.

Here is the ingredients:


2 ¾ cups blanched almond flour
¼ teaspoon salt
1 ½ teaspoons baking soda
½ cup raisins
2 eggs
2 tablespoons honey
2 tablespoons apple cider vinegar
pinch of caraway seeds

In a large bowl combine almond flour, salt, baking soda and raisins

In a smaller bowl combine eggs, honey and apple cider vinegar

Mix wet ingredients into dry.  Place dough on a baking tray and form dough into a large, flat circle that is 8 inches across and 1 ½ inches tall. Using a serrated knife, score top of dough  a half an inch deep in shape of a cross. Sprinkle top of bread with caraway seeds.

Bake at 350° for 20 minutes, then turn off oven and leave bread in for 10 more minutes.

This bread is delicious I can’t stop eat it.

My husband and I love this bread. Especially now that we also know how to make Irish coffee. 😉

Growing your own veggies in an apartment

About two years ago I started to think about growing my own veggies. I wondered how much it would cost? How much stuff do I need? Will this work?

Well, about two days ago I stopped thinking and decided  to try. Before that, I asked for some tips from my amazing friend Shelly. She gave me some good advice, and I got excited about having my little baby plants. We went to Fred Meyer supermarket near our apartment and chose herbs and spinach as a start.

Here is my list and prices:

Basil: $2.99

Jalapeños: $2.99

Spinach seeds: $1.79

Lavender: $1.69

Rosemary: $1.69

Parsley: 1.69

2 clay pots: $1.34 each

2 planters: $2.09 each

Organic potting soil: $4.99

Organic fertilizer: $5.99

Total: $30.68

I got home and started to move them to bigger pots right away I was happy to do that. If they do fine and everything works well I will be growing more veggies in the future.

Its been 3 days now since I got my plants and I can stop look at them to see if they are okay and if they are growing or not…haha. I know is to early but I can’t wait to see if they will be delicious in my food or not. And I had so much fun doing it because it reminds me of when I lived on the farm and we grew all of our own food and made our own stuff. We never had to go to supermarket because we had everything at home.

Any special tip about my plants will be appreciated. And I will update about their future on my balcony 🙂

Easy and healthy salad dressing

      Salad dressing are always so full of salt, sugar, refined oils, artificial flavors, etc. In order to lose weight, many people eat just a salad for lunch/dinner, but they don’t  know how many preservatives and harmful ingredients is in it. They may ended up having a meal with more calories than a burger. Always when eating out, ask to have your dressing in the side not on your salad, so you can watch your portion of dressing or maybe even add just a tablespoon on your salad.

     I never buy salad dressing. I make all my dressings at home because I like to know to know what is in my food.

Here is a simple and delicious salad dressing, and you don’t need lots of stuff to make it.


– 1/2 teaspoon of honey

– 1/2 teaspoon of mustard

– 1 teaspoon of balsamic vinegar

– 1 teaspoon of apple cider vinegar

– 1 teaspoon of olive oil

– 1 teaspoon of lemon juice

– 1 tablespoon of  green onion chopped

– a pinch of oregano, salt, pepper (optional)

Mix all the ingredients and it’s ready.

My salad: one hard boiled egg, one teaspoon of goat cheese, arugula, spinach and my dressing.

This one I had other day. Corn, egg white, lettuce.

Super easy and good for you. 🙂

Healthy eggplant recipe

     Did you know that there are around 7500 tomato varieties?

      Tomatoes are  high in vitamin C  also contain  potassium, iron, phosphorus, vitamin A, vitamin B and fiber.  And contain the carotene a natural antioxidants. Improve the skin’s ability to protect against harmful UV rays. 

This is a easy recipe that taste really yummylicious.

You will need:

– 1 whole eggplant

– About two tomatoes

– And some cheese of your choice( I am using mozzarella)

– oregano ( optional)

Wash the eggplant and the tomatoes  in cold water first.

Slice eggplant in about 2 inches thick.

Put them for baked in 400F for about 15 minutes then turn them over and bake 15 more minutes. Keep checking on  them so you don’t burn. After that, slice the tomatoes add one slices of tomatoes on each slice of eggplant.

Place some cheese on top of tomato and bake again for 5 to 7 minutes. You can add some oregano on the cheese.

Ready… 🙂

Mother’s day…sad day.


      Mother’s day always make me a little sad. It was in a January on 2004 when my mom passed away. It was the hardest 2 years of my life watching her dying slowly. While the cancer was getting stronger and worse, we knew she was going to leave us anytime. But she never gave up life  and she taught us very important lessons about life. She never complained about pain, or not be able to do anything on her own. She was never sad or crying. And by that time she was with a colostomy bag for over 6 months, no standing up or walking, just on bed 24 hours a day.

     One day she told me for enjoy more the simple things of life. Like hugs, laughs, dance, fun, people, family, friends, etc. She showed me how to be happy when you don’t have any reason for be happy about.

      My mom was that lady everyone loved. She was funny, crazy, very generous, and she had the biggest heart on earth. She had thousands of funny stories to tell, jokes, and friends. She loved to dance all over the house even when she was cooking. She could do/learn/make anything without going to the school for. My mom had 7 kids and none of them with doctor help. She was a amazing person and a perfect mom.

     Some weeks before she died, I got from work and as always I went straight to her room to see how she was that day. By that time, she was not seeing well anymore. That day was our amazing moment before she die.

     I walked into the room and I was surprised to see her with the biggest smile in her face, red lip stick ( a little mess up cause she could not see well, but cute anyway), and this giant blue ball shape earrings. She put her arms in the air and waited for me to hug her. We hugged and it was the most especial time we have because inside our heart we knew it was a good bye.

     It is being almost 9 years now, but still hurts and I miss her everyday. Often, I have dreams with her and we talk a lot. I love my mom very much and I am thankful every single minute for everything she did for me.

      So, if you still have your mom, give her all your love and attention now because once she is gone, she will never come back.

My meals today.

Breakfast: Oats, with raisins, 1/2 banana, some almonds and coffee.

Snack:1/2 banana, 1/2 sweet potato, almonds with raisins, tea.

Lunch: Chicken, broussel sprouts, jicama, beets.

Snack; yogurt with half apple, chicken and some croutons.

Dinner: chicken, brown rice, cabbage and some sauce.

Plus I ate this with my snack because I had a hard day at work, walking up and down the stairs all day long. I needed a extra food. I had this one handful bag of almonds in my bag for snack in case I feel hungry on bus in the way home.

Here other funny story. I have two birthdays one is official and other is the real one. The hard part is explain it to people all the time that my birthdays are real none is fake. I do have two birthdays. One is April 6th and other May 12th. So last night I went out celebrate my other birthday, beer, something little to eat and fun. PARTY TIME 🙂
