Spaghetti Squash

I am very excited to tell you that I tried spaghetti squash for the first time ever. I feel stupid saying it but I will say…I have a lot of fun making it. I yelled at my husband to run to the kitchen and see how magic it was. He did’nt seem impressed but I was. I made him touch it and tried make it himself for a bit to see how cool it was.

I just cut it in half and boiled for 20 minutes. Scooped out the seeds with a spoon and started using the fork pulling out the spaghetti. DSC_0308

The whole squash yielded enough for 4 of my meals and other half I gave for my husband’s lunch tomorrow.

I added some of my homemade tomato sauce on top of it. All what I can say is my belly and my face are both very happy.

Home workout

Around almost four years ago I started to work out at home. Slowly I started to buy equipments so I didn’t have to go to the gym because I could not afford it. Some people said they don’t get in shape because they can’t afford a gym but that is jump one more excuse. I lost 20 pounds by working out at home just with body weight exercises and healthy food. But a year ago I got mostly of that weight back because I was suffering from food allergy and intolerances. I had to started to see a nutritionist that found my food intolerances and plans all my meals and supplements. I  lost 12 of pounds and have around 10 or less to go. Here is a little bit about how I started my home workout some years ago.

 I first got dumbbells:

I still remember that I paid $20 dollars for it. (Sorry, but my dog would not take his cute face away from my dumbbells.) I felt like adding dumbbells to my body weight exercises improve a lot but after some months it become to easy again. So I purchased the most exciting thing I have. My 40 pounds sandbag:

I just love this sandbag, I can do lower and upper body exercises and also use on my abs exercises. Months later, it was xmas and guess what was on my list? Dip station. My husband gave them to me and I also love this one. My dip station and my swiss ball are kept by my bed.

I also have this ones:

Four month ago I finally got a membership in a local gym and I am loving it. I go to gym Monday 5 days a week. Rest on Sunday and workout at home with my equipments on Fridays.

Here is my workout for today:

Repeat 3 times:

Sandbag squat: 15 reps

side leg lift on dip station: 15 reps

Push up: 15 reps

Repeat 3 times:

Dumbbells lunges with shoulder press: 10 per leg

Sit ups: 15 reps

High knees: 20 reps

Repeat 3 times:

Triceps dip using a chair: 15 reps

knee tuck: 20 reps

Super man: 20 reps

Repeat 3 times:

side plank lifts: 10 per side

Jump lunges with kicks: 20 reps

Mountain climbers: 30 reps

Took me 20 minutes to complete it.

I am working out really hard because I really need my six packs back. This picture is from today 10 more pounds to go. I am almost there. It is being really hard. I take pictures of my belly every week because it keeps me motivated. What do you do to keep yourself motivated?

Homemade dog treats

My dog started to have a terrible allergy to some treats we got him other day. He has eye discharge that got worse today. I don’t like give him store treats because you never know what are in them.

Tonight I made him some treats but I lost my recipe that I always use and I had to look for other online,  I found  this dog treat recipe very easy to make. It only has 4 ingredients.

  • 2 cups whole wheat flour (you can use another type of flour if your dog is sensitive to wheat)
  • 1 cup rolled oats
  • 1/3 cup peanut butter
  • 1 1/4 cups hot water

I made him lots of hearts.

His sad face is because I wanted him to wait till I take a picture. He ate 4 of them in less than 3 seconds.

This recipe makes enough for a week or so. And I will post the update as soon his eyes get better.

A receita e bem simples. Ingredientes sao:

Exercicio e alimentao saudavel e importante pra eles tambem. E isso ai beijao,

Rutabaga recipe

Other day I bought a rutabaga just because I saw it in the supermarket and I never ate before so I decided to buy one. I stared at it for 3 days and I didn’t know what to do with it. On the fourth day I decided to bake it and it was really good. From now on I am using it as a substitute for potatoes on my recipes, because it taste a bit like potato.

Rutabaga is a root vegetable that originated as a cross between the cabbage and the turnip. Rutabagas are an excellent source of vitamin C, also contain fibers, and a good source of potassium, manganese, and thiamin.

Okay, going back to what I was saying before, I shopped my rutabaga into cute little cubes and  with carrots, olive oil, pepper and pink salt and baked for 35 minutes or until it was soft.

It turned out great and it is now one of my favorites.

I am challenging myself to try two different vegetable per week. Last week I tried rutabaga and turnip. So far I liked both.

Hope you all have a excellent week. 🙂

Bjs

Healthy baked eggplant

Hello there,

Today the recipe is super simple. I sliced a eggplant and dip in egg white and quinoa flakes. I baked it around 20 minutes or so on 400F.

You can also add pink salt and pepper but I forgot add on mine. If you want it crunch just bake longer. It is a very light healthy side dish for dinner or you can eat with hummus or some other dip. I just ate itself because I try keep my meals very simple.

Hope you enjoy it as I did.

Spicy roasted seaweed snack

Recently my doctor suggested me to try add seaweed in my diet, because it will boost my metabolism and help with food digestion. I am having digestion problem for almost two years now.
I first tried the dry version and I didn’t like it so much because it was very strong. After trying  Annie seaweed  I just got addict to this delicious snack. But the package cost around $2 and its very small.
I found a recipe online that show how to make that same snack at home by using the seaweed package I already had.   Anyway, I only use olive oil, sea salt and pepper. And after a few batches I also tried to use my cayenne pepper and the seaweed tasted even better.

Place one sheet of seaweed on a baking pan. Brush the sheet with oil with a basting brush. Add some pepper and salt on top. And put to bake on 350F for only 1:30 to 2 minutes. break then into squares or cut them and try not to eat all at once because they are delicious.

This winter isn’t bad. We are still running like rabbits.

Helping my best friend plus healthy arugula salad

This week I am dedicating my post to my best friend ever Leila. She is being my best friend for so long that I feel like she knows me better than I do. We haven’t seen each other since 2008 but our friendship continues the same.

This is my best friend, me and our friend. This picture is from 2007 I believe.

This Sunday she told me, that she is having some troubles losing weight. She got some extra pounds over those 5 years and is having a really hard time to get back in shape.

This week she went to a nutritionist and  decided to do everything right with  healthy foods and exercises. I am very proud of her and for that reasons I have decided to give her all the support I can.

I started to eat really healthy on Monday same days as she did. For now on we are supporting each other on that not only for weight lost but mainly for our health and well being. Every time I feel like eating something bad I will think about her and I will not do it.

Anyway, this is one of my salads for this week. Amazing and  delicious with all the vitamins you need. I made just for myself so if you sharing with someone just add extra amounts.

Ingredients for the salad:

– Arugula

– Fresh boiled beets

– One strawberry

– 7 raw almonds

– 1/2 avocado

–  one tablespoon of goat cheese

– some slices of cucumber

A mix of a little bit of lemon juice, olive oil, balsamic vinegar, honey, mustard, and red wine vinegar (optional).

The salad with dressing is yummylicious.

Don’t ever think you are alone. There are always people that would love to help you to get healthier and better about yourself. Enjoy the salad.

Here is a pictures of my little puppy. He is getting bigger.

Homemade peanut butter

I am so excited 🙂 I got my first food processor ever ( thank you for my mother in law) and now I can make so many delicious recipes.

Saturday was my birthday but I was not feeling well to celebrate. Every year on my birth day I get really sad I don’t really know why I always feel that way. I miss my mom and I remember how special she made me feel on my birthday and I get really sad because I will never see her again.

So instead of celebrating my birthday I got myself some nuts and beans and start to play around with my food processor. I made salsa, hummus, and peanut butter. I didn’t know homemade peanut butter was so easy and yummy I will never buy it again. After going to Trader Joe’s to get my ingredients I made it.

I just processed it for a couple minutes and… surprise… surprise my peanut butter was ready.

Here is a quick healthy snack with peanut butter.

Learning to jump rope after 30s

First of all, spring is here yay…

Today, for the first time in my life I decided to face my fear of jumping rope. In my workout room I have one jump rope that I got from my husband in 2011. I used it once for 20 seconds and I could not jump. I was frustrated the most because everyone can jump rope except me. When I was a teacher in Brazil my student always tried push me to do it and i always said no mostly because i was embarrassed about it.

After my run with the puppy I went to the parking lot in my building with my jump rope and I tried it. It is not easy plus I kept thinking everyone in the world was looking at me and laughing because I wasn’t good. My plan was to try it for at least 10 minutes only and I DID. I’m so happy that I did. It was fun and now I will try improve it everyday that’s my new goal. I’m so excited about.

Great news, my puppy loves to run so I don’t have excuses to skip it. He is giantesco ( my word for something bigger giant )

Lately I’m been addicted to this green smoothie . Its super fast and easy to make and give you an extra energy.

In the blender mix 1 cup of water, a hand full of fresh spinach, 1 teaspoon of natural peanut butter, some honey and a scoop of vanilla or unflavored whey protein powder with 2 ice cubes. Blend all and enjoy it.
