Rutabaga recipe

Other day I bought a rutabaga just because I saw it in the supermarket and I never ate before so I decided to buy one. I stared at it for 3 days and I didn’t know what to do with it. On the fourth day I decided to bake it and it was really good. From now on I am using it as a substitute for potatoes on my recipes, because it taste a bit like potato.

Rutabaga is a root vegetable that originated as a cross between the cabbage and the turnip. Rutabagas are an excellent source of vitamin C, also contain fibers, and a good source of potassium, manganese, and thiamin.

Okay, going back to what I was saying before, I shopped my rutabaga into cute little cubes and  with carrots, olive oil, pepper and pink salt and baked for 35 minutes or until it was soft.

It turned out great and it is now one of my favorites.

I am challenging myself to try two different vegetable per week. Last week I tried rutabaga and turnip. So far I liked both.

Pessoal, do Brasil esse aqui e uma receitinha bem fácil com couve-nabo que fiz semana passada. E so cortar em cubinhos adicionar azeite de oliva, sal do himalaia e algumas cenouras e assar por aproximadamente 30 minutos. Bem fácil e saudável. E uma delicia. Bjs

Easy english muffin pizza

Today I made some english muffin pizza at work. Unfortunately I can’t eat gluten or so I only can make them for someone else. They are very easy and everyone loved them.

You will need:

– English muffins

– Pizza sauce

– Some kind of veggies you like

-Mozzarella

-Pepperoni

 

Slice the english muffin in half and add some sauce.

Add the veggies or pepperoni on top of sauce.

And last some mozzarella.

Bake for around 15 minutes on 350F.

I made pepperoni ones and mushrooms with tomatoes for vegetarian people.

Healthy baked eggplant

Hello there,

Today the recipe is super simple. I sliced a eggplant and dip in egg white and quinoa flakes. I baked it around 20 minutes or so on 400F.

You can also add pink salt and pepper but I forgot add on mine. If you want it crunch just bake longer. It is a very light healthy side dish for dinner or you can eat with hummus or some other dip. I just ate itself because I try keep my meals very simple.

Easy and delicious scones recipe

Since last year, I am working as a barista at a local coffee shop but I’m still dreaming with a better job where I can learn more and feel like I am part of something bigger and important. At my job I also bake and make things like cookies, bars, gluten free foods, salads, sandwitches, scones, muffins and cakes. So I decided to share in here the foods I make even if they are not so healthy.

Here we go.

This is a simple and easy scone recipe. I had tried so many combinations already ( blueberries, mixed berries, blackberries, cranberries, raspberries and peach).

Ingredients are:

2 cups of flour

1/4 cup of brown sugar

1 tablespoon of baking powder

1/4 cup of cold butter

3/4 cup of cream

1 egg

1/2 cup of fruit

Mix all ingredients in a mixer except the cup of fruits. With your hands shape it into a ball and add fruits in the middle.

Slowly close it.

And cut into pieces. you can choose what size to cut. Small pieces small scones or big pieces bigger scones.

And here it is after baking.

It is really good and easy to make. you can top it with glaze ( powder sugar and cream or add some lemon or orange zest to the glaze).

Summer salad recipe

Hello, it’s been a long time since I last blogged. Life is been really great and I am finally feeling better from all my digestion, allergies problems.

I want to get back into writing my blog because its fun and I miss it a lot.

Today I have a fast delicious recipe for a summer dinner. All what you need is to chop some tomatoes, greens onions and corn. Add some pepper, olive oil and pink salt to it, and you have a very delicious side dish.

For tomorrow I have rutabaga recipe. I ate rutabaga today for the first time and I really like it.
